There's probably never been more focus on nutrition's importance in children's health than there is right now. But as any parent will tell you, getting kids to eat right is a challenge. Some even try to trick them into eating healthier, hiding veggies in their favorite foods.
Purple Asparagus takes a much more direct approach, bringing chefs, fresh produce, and hands-on fun into schools with its Delicious Nutritious Adventures™ program. The Chicago-based nonprofit organization also brings its message to community groups and farmers markets.
The goal, according to their website, is to educate "children, families, and the community about eating that's good for the body and the planet." That means teaching kids and parents to incorporate more fruits, vegetables, and whole grains into their diets--and fewer processed foods. Not only is it helping fight childhood obesity and developing healthier lifestyles, it's contributing to a smaller carbon footprint.
Purple Asparagus is the dream of Melissa Graham, a former attorney who found more joy in the kitchen than the courtroom. That dream is paying off. In January, the organization was recognized by Rachael Ray's Yum-O! Foundation for its efforts. And Character Approved founder Graham joined chefs and kids' advocates from across the nation at the White House for the launch of First Lady Michelle Obama's Let's Move! campaign in 2010.
